4 chicken breasts
3 tbsp oil
3 tsp crushed coriander seeds
3 tsp grated lime zest
2 tsp paprika
2 tsp muscavdo sugar
12 unpeeled garlic cloves
6 fresh red chillies
Mix the oil with the crushed coriander seeds, grated lime zest, paprika and muscavdo sugar.
Place the chicken breasts in a baking dish and spoon over the marinade, before squeezing fresh lime juice over the chicken.
Cover and marinade for at least 30 minutes.
Tuck the garlic cloves and fresh red chillies around the chicken breasts, or if you keep the skin on, tuck both under the skin.
Roast the chicken, uncovered for approx 35-40 minutes in a preheated oven 180 degrees.
Serve with roasted vegetables or a fresh salad and salsa....delicious!
